For me the highlights of Caribbean cruise holidays are the port days. It's a chance to experience a different culture, get exposed to a new language, or even do a brand new activity like parasailing. What should you expect on your port days?
Your Grand Cayman port day will start when the ship drops anchor in the harbour near George Town. Several taxi boats will ferry you to land, however, you can't go immediately. You have to wait for the ship to clear immigration. Once the ship is clear, you can depart and start your excursions.
Should you take the ship's excursions or your own private excursion? Well that depends on how adventurous you are. For example if you are interested in Stingray City or swimming with dolphins, and you can get a less expensive deal on your own (including transportation to and from the ship), then go for it. I mentioned these two attractions for a reason -- they will be far from your ship. It's entirely possible to do these excursions on your own, but if something goes wrong, and you are on a ship's excursion, your boat will wait for you. Otherwise, you will be on your own.

Regardless of how you decide to enjoy the Grand Cayman attractions, you'll discover that there is almost an endless array of things to do. You could go hiking on the Mastic Trail, go to see the Turtle farm, ride horses on the beach, swim with dolphins or stingrays, go parasailing, and so on and so on...
What if you decide to stay on board? The ship's activities are decreased during port days, but not eliminated. You can still find things to do like exercise class, spas, games, and movies. In fact, if you stay on board you many find port days to be the most peaceful days of your vacation.
